Meal Planning Fun: Entries #2 and 3

Continuing my meal planning fun entries:

#2. Last week: roast chicken (preprepared by the grocery store), mac and cheese, peas

#3. This week: roast turkey, homemade mashed potatoes, green beans

Next week (#4): all take out for dinner: 

  • 3x Zambrero burritos if I can grab a car to go to the location to buy them (this will last me 6 days because I eat half a large burrito; 
  • tom kha gai soup from my fave thai place because I've been craving it; 
  • lunch: leftover turkey sandwiches (if any turkey is left over) or ham sammies. 
  • Snacks are 
    • dark chocolate and strawberries and bananas or 
    • cheddar cheese and apples or 
    • some of 1 small bag of cheese popcorners or 
    • butter popcorn with taco seasoning sprinkled on top of it

Planning in an Uncertain Future

With my flat complex being sold, my future feels extremely uncertain. Unfortunately, I've been planning for the future as if my tenancy was relatively secure. 

It took me nearly 5 years of living here to finally start feeling settled enough in my apartment to make changes and investments in my apartment. Things like buying and putting up hooks in specific places where I like to hang towels, getting pieces of art that fit the wall dimensions, throw pillows and blankets that coordinate with the landlord's furniture, a desk and bookcase that fits my room, extra furniture for storage, implements that match the kitchen paint color, etc., that kind of thing. 

I only did that because my landlord kept acting like my place was mine for as long as I wanted it. Even then, I felt little niggles of doubt, but ignored it. When you don't own your own place, the anvil can be dropped whenever.

I HATE that I am always right. I'm usually the most skeptical person in the room, the person that finds the holes and 'what-ifs.' It usually bears out that what other people take as pessimism and critique matches reality in practice. 

It is part of the ADHD gift, I suppose - being able to anticipate the other shoe dropping. Because, in my experience, it always has. 

It's really, really annoying. 

Anyway, feeling so secure in the recent past allowed me to start dreaming of what I'd do post-PhD, and create a few 'dream budgets.' But now that my future is uncertain, my dream budgets have a glaring flaw: they're based on my rent staying approximately what it is now (bar a $5-$10 per week increase each year, which is what my landlord averages). Those costs could usually be taken care of by splitting the rent increase between three sources: my room, the primary bedroom, and the garage rent space. In 2014, I paid $550 per week for my apartment. In 2024, I pay $585. That's just a $35 per week increase in 10 years, about $3.50 per week increase per year.

Looking around now, there is NOTHING comparable available for rent that would keep my rent the same. I'd have to take a major downgrade in living conditions even if I doubled what I paid for my own room right now.

In other words, I'm screwed. 

Even with my hours being increased to 0.5 FTE (what my boss agreed to) post-PhD, I still lose my PhD stipend in September. I won't actually make more than I do now...in fact I'll make LESS. 

It feels useless here in NZ now. Rent and housing prices are so high that I can't see a future here anymore. I was really hoping to get to enjoy my life post-PhD, having lots of spare time to do all the things I haven't been able to for the past 10 years, but I don't see how that is possible. 

The rental prices are such that I could devote my WHOLE paycheck, bar groceries and utilities and medical costs, to rent and it still would not allow me to get my own bathroom.

Meal Planning Fun: Entry #1

Pre-pandemic, I used to post weekly updates on how my goals were going, to help keep me accountable.  This included what I was cooking and eating each week, my meal plan. 

I think I'd like to start trying to do that kind of thing again. It's sorta fun. 

I have taken to eating two real meals a day since the pandemic started. Being at home so much, I guess I don't get as hungry. Or - more likely - food is always around since I work from home, so I end up snacking more?

Anyway, this week, I'm making Greek gyros. That will comprise my dinner (2nd meal) of the day. I have neglected to make a plan for my first meal. I assume I'll have some leftovers from my freezer or make eggs and bacon? I really am usually better at this kind of thing...oops.

Dinner will be some form of this recipe. I'm preparing some chicken breasts according to that recipe, and plan to pair the chicken with a pita, hummus, tatziki, and butter lettuce to kind of make a pita sandwich (is that what a gyro is??). I am also cooking haloumi, zucchini, red bell pepper, cherry tomatoes, and red onion, and plan to dress the veggies with lemon juice, feta, and any leftover greek yogurt I have. Some combo of those foods will serve as my dinner this coming week. Yum!

I like to create my own combinations based on my particular tastes, so rarely ever follow a recipe. I might follow it the first time I make something entirely new to me (e.g. Japanese cuisine), but generally I don't measure anything or follow ingredient lists to a tee. 

So far it is working! I have come a REALLY long way since taking my Summer Tomato course in 2016.

One Big 2024 Goal: Accomplished!

I created my 2024 goals earlier this year, with a view toward post-PhD life. 

One of them was a biggie! "Ask for more hours at work: goal between 0.47 to 0.8 FTE, with a preference towards the lower end for the year after my PhD."

I chatted to my boss this past week and we are budgeting for me to increase my hours to 0.5 FTE (20 hours per week) starting 1 July, the beginning of the financial year. I'm still working on my PhD, so basically I'd 'bank' most of my work hours until I've completed my PhD, and then work and make up for all that time in the latter half of the year, once my PhD is submitted.  

My current FTE is 0.3 (12 hours per week). 

With this increase in hours, my salary from my job will go from ~$28,500 per year to $47,500 (pre-tax). 

There's also potential that I'll get written into other projects at 0.05 FTE more (bringing my work FTE to a total of 0.55 FTE, or 22 hours/week).

I am happy that I managed to accomplish this goal, and I'm trying to enjoy a sense of relief and accomplishment right now. 

However, in the back of my mind, I know it isn't time to rest yet. My goal was created when I thought I was going to enjoy the ~same rent as I do right now, and I've since learned that this will not be the case, not by a long shot. It isn't fun living in limbo, but I also want to be able to take the wins and enjoy them where I can, so that post will be for another day. Until then, HURRAH for me!
